French Bean Mango Salad


  • 8 oz Southern Selects French Beans
  • 2 cups green cabbage, shredded
  • 1 cups radicchio, shredded
  • 1 tbsp diced sweet onion
  • 1 small mango, peeled and diced into ½ inch cubes
  • 1 garlic clove, minced
  • 2 tbsp balsamic vinegar
  • 6 tbsp extra virgin olive oil
  • Fresh cracked pepper and sea salt


  1. Shred the cabbage and radicchio, dice the onion, and set aside
  2. Cook beans according to the directions on the package, until just tender
  3. Immerse beans in ice water and drain
  4. For the balsamic vinaigrette, whisk together the oil, vinegar, garlic, salt and pepper
  5. Toss the beans, cabbage, radicchio, and onion in half of the vinaigrette and let sit for 10 minutes. During that time, peel and dice the mango and add it to the salad mixture
  6. Add additional vinaigrette to taste and season with pepper
