Mango Chicken Lettuce Wraps


  • 1 large, ripe Southern Selects mango
  • ½ red onion, thinly sliced
  • ½ red pepper, thinly sliced
  • Romaine or butter lettuce leaves
  • 1/2 lb. skinless, boneless chicken breast
  • 1 garlic clove, minced
  • 2 tbsp fresh cilantro
  • 3 tbsp teriyaki sauce
  • 3 tbsp vegetable oil
  • Salt and pepper


  1. Combine teriyaki sauce, oil, and garlic in a large Ziploc bag. Add chicken breast and place in refrigerator for 45 minutes
  2. Peel and cut mango into ½ inch cubes
  3. Thinly slice onion and red pepper
  4. Remove chicken from marinade and trim into thin strips
  5. Heat oil in a large skillet over medium heat and cook the chicken until its beginning to brown (around 5 minutes). Add onion and pepper and cook for an additional 3-5 minutes or until chicken is cooked through
  6. Assemble the wraps by placing a spoonful of the mixture on lettuce leaves
  7. Top with fresh mango and garnish with cilantro
