Mango Chicken Lettuce Wraps
Ingredients
- 1 large, ripe Southern Selects mango
- ½ red onion, thinly sliced
- ½ red pepper, thinly sliced
- Romaine or butter lettuce leaves
- 1/2 lb. skinless, boneless chicken breast
- 1 garlic clove, minced
- 2 tbsp fresh cilantro
- 3 tbsp teriyaki sauce
- 3 tbsp vegetable oil
- Salt and pepper
Instructions
- Combine teriyaki sauce, oil, and garlic in a large Ziploc bag. Add chicken breast and place in refrigerator for 45 minutes
- Peel and cut mango into ½ inch cubes
- Thinly slice onion and red pepper
- Remove chicken from marinade and trim into thin strips
- Heat oil in a large skillet over medium heat and cook the chicken until its beginning to brown (around 5 minutes). Add onion and pepper and cook for an additional 3-5 minutes or until chicken is cooked through
- Assemble the wraps by placing a spoonful of the mixture on lettuce leaves
- Top with fresh mango and garnish with cilantro
