Grilled Avocado Stuffed with Mediterranean Couscous

Ingredients
  • 3 Southern Selects avocados
  • ½ cup Israeli couscous, cooked
  • 1 cup baby heirlooms, quartered
  • 1-2 small Persian cucumbers
  • ½ small red onion
  • ¼ cup pitted Kalamata olives, quartered
  • 1 tbsp parsley, finely chopped
  • ¼ cup Feta cheese, crumbled
  • 3 tbsp olive oil, plus 1 tbsp for avocado
  • 1 tsp honey
  • 1 tbsp lemon juice, plus 1 tbsp for avocado
  • 1 tbsp red wine vinegar
  • Salt and pepper

 

Instructions
  1. Preheat grill on medium heat.
  2. Halve the avocados, remove and discard the pit and lightly brush each side with olive oil and lemon juice. Sprinkle each half with a pinch of salt and pepper
  3. Place avocado, open face down, on the grill and cook for about 5 minutes or until grill marks show
  4. In a medium bowl, combine the couscous, tomatoes, onions, cucumber, olives, parsley and feta
  5. Combine the oil, honey, lemon juice, and vinegar. Drizzle the mixture over the couscous salad and mix.
  6. Place heaping spoonful of couscous salad onto the  center of each avocado and serve
