Avocado and Mango Arugula Salad


  • 1 Southern Selects mango, peeled and diced
  • 2 Southern Selects Hass avocados, cubed
  • 4 large handfuls of arugula, washed and dried
  • 6 small fresh mozzarella balls, sliced
  • 3 tbsp lemon juice
  • 1/2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 1/3 cup pine nuts
  • salt & pepper, to taste
  • small handful hemp seeds (optional)


  1. Place all ingredients in a large bowl, except for lemon juice, olive oil and mustard
  2. Toast pine nuts in pan until they turn light brown
  3. Mix in a small bowl, the 3 remaining ingredients for the dressing
  4. Drizzle atop salad bowl and mix
  5. Sprinkle toasted pine nuts on top and serve
