Southern Selects Grilled Marinated Baby Squash Recipe

Grilled Marinated Baby Squash


  • 1 pound Southern Selects baby squash
  • 1 large sweet potato, cut into 1 inch cubes
  • 2 medium red onions
  • 1 tbsp fresh ginger, grated
  • 2 large garlic cloves
  • 1 tbsp olive oil
  • Salt and pepper
  • Wooden skewers


  1. Preheat the grill
  2. Soak several wooden skewers in warm water (this will help avoid burning)
  3. Wash and peel the sweet potatoes, and cut into 1 inch cubes. Microwave on high for 1 minute
  4. Cut the squash into halves and the onion into eighths
  5. Toss all the vegetables in a bowl with the garlic, ginger, oil, salt and pepper
  6. Skewer the vegetables, alternating between the onion, potatoes, and squash
  7. Place skewers on the grill and cook for 10 minutes, turning the skewers to cook evenly all sides
