Grilled Marinated Baby Squash
Ingredients
- 1 pound Southern Selects baby squash
- 1 large sweet potato, cut into 1 inch cubes
- 2 medium red onions
- 1 tbsp fresh ginger, grated
- 2 large garlic cloves
- 1 tbsp olive oil
- Salt and pepper
- Wooden skewers
Instructions
- Preheat the grill
- Soak several wooden skewers in warm water (this will help avoid burning)
- Wash and peel the sweet potatoes, and cut into 1 inch cubes. Microwave on high for 1 minute
- Cut the squash into halves and the onion into eighths
- Toss all the vegetables in a bowl with the garlic, ginger, oil, salt and pepper
- Skewer the vegetables, alternating between the onion, potatoes, and squash
- Place skewers on the grill and cook for 10 minutes, turning the skewers to cook evenly all sides
