Creamy White Asparagus Soup
Ingredients
- 2 lbs. Southern Selects white asparagus, peeled
- 2 small onions, diced
- 1 garlic clove, minced
- 3 tbsp lemon juice
- 2 tbsp butter
- 4 oz heavy cream
- 3 cups broth (chicken or vegetable)
- 1/4 tsp white pepper & salt
- croutons and/or thyme, for garnish
Instructions
- Trim ends of white asparagus and wash
- Boil peeled asparagus, with lemon juice, for 8 min
- Drain asparagus and once cool, chop into 1 inch pieces, and set aside tops
- Place large pot over medium heat, add butter, saute onion and garlic until translucent
- Add stock, asparagus pieces, and cream and cook 10 min on low heat
- Take off heat, season with salt and white pepper, and blend with immersion blender
- Garnish with thyme and/or croutons
