Creamy White Asparagus Soup


  • 2 lbs. Southern Selects white asparagus, peeled
  • 2 small onions, diced
  • 1 garlic clove, minced
  • 3 tbsp lemon juice
  • 2 tbsp butter
  • 4 oz heavy cream
  • 3 cups broth (chicken or vegetable)
  • 1/4 tsp white pepper & salt
  • croutons and/or thyme, for garnish


  1. Trim ends of white asparagus and wash
  2. Boil peeled asparagus, with lemon juice, for 8 min
  3. Drain asparagus and once cool, chop into 1 inch pieces, and set aside tops
  4. Place large pot over medium heat, add butter, saute onion and garlic until translucent
  5. Add stock, asparagus pieces, and cream and cook 10 min on low heat
  6. Take off heat, season with salt and white pepper, and blend with immersion blender
  7. Garnish with thyme and/or croutons
