Southern Selects Brussels Sprouts Black Bean Tacos Recipe

Brussels Sprout & Black Bean Tacos


  • 1 lb. Southern Selects Brussels Sprouts
  • 1 tbsp olive oil
  • 1 small sweet onion, diced
  • 1 mango
  • 2 cloves garlic
  • 1 can black beans, drained and rinsed
  • Flour tortillas


Chipotle Cream Sauce

  • ½ c nonfat yogurt
  • 2 tbsp mayonnaise
  • 2 tsp chipotle pepper in adobo
  • Fresh lime

  1. Trim and quarter Brussels sprouts
  2. Warm oil in a large pan over medium-high heat
  3. Mince the garlic cloves and sauté with Brussels sprouts until lightly browned and cooked through
  4. Add the beans and allow to cook for 1-2 minutes
  5. Place sautéed vegetables with beans in a bowl
  6. Toast the tortillas using the same pan, about 1 minute on each side
  7. Combine sauce ingredients in a bowl (use a blender for a smoother texture)
