Homemade Blueberry Muffins


  • 2 cups fresh Southern Selects blueberries
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/2 tsp vanilla
  • 1/2 cup butter, softened
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt


  1. Preheat oven to 375 degrees Fahrenheit. In a medium mixing bowl, cream the butter and sugar. Add eggs and mix well, then stir in the milk and vanilla.
  2. Combine dry ingredients in a separate bowl and then add to wet mixture. Gently fold in blueberries.
  3. Fill in greased muffin cups about 2/3 full. Sprinkle tops with a little sugar, then bake in oven for 20 minutes or until lightly browned.
