Homemade Blueberry Muffins
- 2 cups fresh Southern Selects blueberries
- 2 eggs, beaten
- 1/2 cup milk
- 1/2 cup butter, softened
- 1 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- Preheat oven to 375 degrees Fahrenheit. In a medium mixing bowl, cream the butter and sugar. Add eggs and mix well, then stir in the milk.
- Combine dry ingredients in a separate bowl and then add to wet mixture. Gently fold in blueberries.
- Fill in greased muffin cups about 2/3 full. Sprinkle tops with a little sugar, then bake in oven for 20 minutes or until lightly browned.
