Asparagus Ribbon Salad with Parmesan


  • Southern Selects green and/or purple asparagus
  • Olive oil
  • Lemon juice
  • Good quality Parmesan cheese
  • Fresh herbs (basil, Italian parsley, thyme, etc.)
  • Sea salt and pepper

  1. Shave raw asparagus into ribbons with a vegetable peeler or a mandolin
  2. Combine lemon juice, oil, and fresh herbs in a small bowl
  3. Toss asparagus ribbons with dressing
  4. Garnish with parmesan shavings
  5. Season with sea salt and pepper
