Fresh Blueberry BBQ Chicken Wings
Ingredients
- 1 ½ cups fresh Southern Selects blueberries
- 3 shallots, sliced
- ½-1 chipotle pepper (canned in adobo sauce)
- 1 garlic clove, minced
- ½ tbsp vegetable oil
- 4 tbsp honey
- ½ tbsp ketchup
- ½ tbsp Dijon mustard
- ½ tbsp Worcestershire sauce
- 1 ½ tbsp apple cider vinegar
- ½ tsp chili powder
- ½ tsp cumin
- ½ tsp paprika
- 1 pinch of all spice, nutmeg and cinnamon
- Salt and pepper
Wing Ingredients
- 2 pounds chicken drumettes and wings
- ¼ cup unbleached all-purpose flour
- 1/8 cup cornstarch
- ½ tsp garlic powder
- 1 ½ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 500 degrees F
- Whisk together the dry wing ingredients. Lightly dredge each wing in the mixture, place on baking sheet and spray with cooking spray
- Bake for 25 minutes or until golden
- Sauté shallots in vegetable oil over medium-high heat until translucent. Add ginger and garlic and cook until shallots start to brown
- Add remaining ingredients, except chipotle, salt/pepper and bring to a boil. Simmer over low heat for 8-10 minutes, covered
- Allow mixture to cool before blending in chipotle pepper, salt and pepper
- Toss wings in sauce and serve immediately
