Sugar Snap, Avocado & Cheese Toast

Ingredients
- 8 oz Southern Selects Sugar Snap Peas
- 1 ripe avocado
- 8 slices of good quality bread
- 1 ½ cups of mascarpone cheese
- 1-2 tbsp honey
- ½ tsp salt
Instructions
- Place sugar snaps on baking sheet and broil them, turning until lightly charred on both sides
- Toast the bread slices
- Scoop flesh from halved avocado and cut into thin slices
- Mix mascarpone with honey and salt in a small bowl
- Spread the mixture onto toasted bread. Alternate sugar snap pea and avocado slices on toast and enjoy
