Sugar Snap, Avocado & Cheese Toast

  • 8 oz Southern Selects Sugar Snap Peas
  • 1 ripe avocado
  • 8 slices of good quality bread
  • 1 ½ cups of mascarpone cheese
  • 1-2 tbsp honey
  • ½ tsp salt

  1. Place sugar snaps on baking sheet and broil them, turning until lightly charred on both sides
  2. Toast the bread slices
  3. Scoop flesh from halved avocado and cut into thin slices
  4. Mix mascarpone with honey and salt in a small bowl
  5. Spread the mixture onto toasted bread. Alternate sugar snap pea and avocado slices on toast and enjoy
