Brussels Sprout & Black Bean Tacos
Ingredients
- 1 lb. Southern Selects Brussels Sprouts
- 1 tbsp olive oil
- 1 small sweet onion, diced
- 1 mango
- 2 cloves garlic
- 1 can black beans, drained and rinsed
- Flour tortillas
Chipotle Cream Sauce
- ½ c nonfat yogurt
- 2 tbsp mayonnaise
- 2 tsp chipotle pepper in adobo
- Fresh lime
Instructions
- Trim and quarter Brussels sprouts
- Warm oil in a large pan over medium-high heat
- Mince the garlic cloves and sauté with Brussels sprouts until lightly browned and cooked through
- Add the beans and allow to cook for 1-2 minutes
- Place sautéed vegetables with beans in a bowl
- Toast the tortillas using the same pan, about 1 minute on each side
- Combine sauce ingredients in a bowl (use a blender for a smoother texture)
