Avocado and Mango Arugula Salad
Ingredients
- 1 Southern Selects mango, peeled and diced
- 2 Southern Selects Hass avocados, cubed
- 4 large handfuls of arugula, washed and dried
- 6 small fresh mozzarella balls, sliced
- 3 tbsp lemon juice
- 1/2 tbsp Dijon mustard
- 2 tbsp olive oil
- 1/3 cup pine nuts
- salt & pepper, to taste
- small handful hemp seeds (optional)
Instructions
- Place all ingredients in a large bowl, except for lemon juice, olive oil and mustard
- Toast pine nuts in pan until they turn light brown
- Mix in a small bowl, the 3 remaining ingredients for the dressing
- Drizzle atop salad bowl and mix
- Sprinkle toasted pine nuts on top and serve
