Asparagus Ribbon Salad with Parmesan
Ingredients
- Southern Selects green and/or purple asparagus
- Olive oil
- Lemon juice
- Good quality Parmesan cheese
- Fresh herbs (basil, Italian parsley, thyme, etc.)
- Sea salt and pepper
Instructions
- Shave raw asparagus into ribbons with a vegetable peeler or a mandolin
- Combine lemon juice, oil, and fresh herbs in a small bowl
- Toss asparagus ribbons with dressing
- Garnish with parmesan shavings
- Season with sea salt and pepper
